Baked Chicken Fajitas

I got this super easy recipe in an e-mail and had to try it out. The only thing I will change for next time is to find a way to keep it warm after it comes out of the oven.

I also served it with sour cream, salsa, cheese, jalapenos, and Mexican rice. YUM!

Baked Chicken Fajitas-

1 pound boneless, skinless strips of chicken (uncooked) - I used about 3 lbs of chicken... it was 6 chicken breast
1 can diced tomatoes (undrained)- I used petite size diced tomatoes.
1 medium onion, cut into strips
1 medium green pepper, cut into strips
1 medium red pepper, cut into strips - i did not use any red peppers in mine.
2 Tbsp. vegetable oil-
2 tsp. chili powder-
2 tsp. cumin-
1/4 tsp. salt-
tortillas

Toss all the ingredients (except the tortillas) in a 13 x 9 inch baking dish. Bake at 400 until chicken is done, about 25 minutes.
